CORN MEAL MUFFINS

1. Set oven at 425 degrees

2. Grease pans

3. Melt 3 T. butter

4. Beat 1 egg

5. Mix 1-1/3 C. milk with beaten egg.

6. Mix 2 C. self-rising corn meal and 1 T. sugar together.

7. Stir together milk and egg mixture and meal and sugar mixture then add melted butter.

     Fill muffin pans two thirds full and bake

       20-25 minutes.
