ENGLISH APPLE CAKE

1 c. oil 

1 tsp. salt

2 c. sugar

1 c. pecans, chopped

2 eggs

2 large apples, diced

3 c. flour

1 tsp. vanilla

1 tsp. soda      

Sift flour, soda and salt together.  Set aside.  Mix oil, sugar and eggs in a large bowl.  Add apples, nuts and vanilla.  Mix well.  Stir in flour mixture.  Batter will be stiff.  Bake in 9x13 inch pan at 350 deg. about 40 minutes.  Test with toothpick.

 GLAZE:        1 c. powdered sugar

                        4 Tbsp. water

                        ½ tsp. vanilla

Add glaze immediately after taking cake out of oven
