ORANGE-PINEAPPLE or PIG PICKIN CAKE

1 box Duncan Hines yellow butter cake mix 

1 small (about 11 oz.) can mandarin oranges  (do not drain)

3 eggs

One-half cup oil

Preheat oven at 375 deg. Grease and flour three 9-inch cake pans.

Mix above ingredients on low for 30 seconds, then on medium speed for 2 minutes.  Divide the batter evenly between the 3 pans and bake 15 to 20 minutes or until done. 

FROST with the following:

One 16-oz. container Cool Whip

2 small packages of vanilla instant pudding

One 20 oz. can crushed pineapple (do not drain)

Mix the vanilla instant pudding and the pineapple with juice.  Fold in the Cool Whip until well blended.
