Pumpkin Bread

2 cups sugar

1 cup vegetable oil

3 eggs, lightly beaten

1 (15-ounce) can pumpkin.

3 cups flour

3/4 teaspoon baking soda    

3/4 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

3/4 teaspoon salt

1 cup walnuts, chopped (optional)

 

Instructions:                                

1.Grease and lightly flour one large loaf pan and one small loaf pan or three small loaf pans and set aside.

2. In a large bowl, beat sugar and oil until well-blended.

3. Add eggs and pumpkin and lightly beat.

4. Add remaining ingredients and mix with large spoon until well blended

5. Pour batter into one large and one small loaf pan or 3 small loaf pans.

6. Bake in a preheated 350 degree oven for 35 minutes to 1 hour.

 

Note: Small loaf pans need less baking time
