Sourdough Bread

1 cup sourdough starter

1 1/2 cup warm water

1/2 cup vegetable oil

2 tbsp. sugar

2 tsp. salt

6 cups bread flour (white or whole wheat)

 

Mix first five ingredients, then add flour one cup at a time, to make a firm dough.  Place in a greased bowl, turn once, cover, and let rise eight to 12 hours.  Punch down. Divide into thirds. Place in greased loaf pans. Cover and let rise eight to 10 hours. Bake at 350° F. 30 to 35 minutes or until golden brown.

Sourdough Starter

3/4 cup sugar
3 tbsp. potato flakes
1 cup warm water
1 package yeast

Mix all ingredients. Cover for one day. Stir and pour into quart jar with holes in lid so it can breathe. Refrigerate for two to three days before feeding and using in making bread.

TO FEED STARTER

1)  ¾ cup sugar in a 2-cup container

2) Add 3 tbsp. potato flakes

3) Add 1 cup very warm water

Stir well and add to starter.  Set out all day.  Shake occasionally, but not necessary.  Feed every 3 to 5 days.  That night, remove one cup of starter and make your bread, or give a cup to a friend.  Refrigerate the rest of the starter until time to feed again.
