FRESH SPINACH SALAD 

1 pound fresh spinach, rinsed and drained 

1 small red onion, sliced 

3 hard-cooked eggs, chopped 

6 slices bacon, fried and crumbled

Remove stems from spinach leaves and discard stems.  Tear leaves into pieces.  Combine spinach with onion, eggs and bacon.  Serve with dressing.

DRESSING

1 small onion, chopped

1 cup vegetable oil

½ cup sugar

¼ cup vinegar

1 tbsp. prepared mustard

½ tsp. salt

½ tsp. pepper

Combine all ingredients.  Blend.   Chill before serving.
