Minestrone Soup

1 tbsp. oil
1 cup chopped onion
½ cup chopped celery
½ cup thinly sliced carrots
1 cup green beans
2 cans (14 oz.) chicken broth
1 can (14 oz.) beef broth
1 can (14-1/2 oz) stewed tomatoes
1 can (8 oz.) tomato paste
1 can (16 oz.) cannellini beans
½ cup orzo pasta
1-1/2 tsp. dried Italian Seasoning
1 tsp. bottled minced garlic
Salt and pepper, to taste
Grated Parmesan cheese

Heat oil on medium high in soup pot. Add onion, celery, sliced carrots and green beans to pot.

Pour chicken and beef broth to pot and simmer 30 minutes.

Serve, topping each serving with a tablespoon of Parmesan cheese.
