Peanut Butter Cookies

 

2 1/2    cups all-purpose flour

1/2        tsp. soda

1/2        tsp. salt

1           tsp. baking soda

1/2        cup margarine

1/2        cup butter

1            cup granulated sugar

1/3         cup ADDITIONAL granulated sugar to roll cookies

1            cup brown sugar

2             eggs slightly beaten

1            cup peanut butter

1 1/2      tsp. vanilla

 

Preheat oven to 375 degrees. In a large bowl, cream together sugar and

butter. Stir in eggs, peanut butter and vanilla; mix well. Stir in flour which

has been  sifted with soda, baking powder and salt. Stir until well

combined

 

Roll dough into 1 inch balls and then roll in the ADDITIONAL sugar. Place

on greased

cookie sheet and flatten with fork. Bake for 12-15 minutes or until done.

 

Note: Instead of greasing my cookie sheet, I use Reynolds Parchment

 Paper.
